Moving Towards a Sustainable Kitchen at Monteverde Institute

The Monteverde Institute (MVI) is a non-profit organization that hosts programming for environmental and community groups. These groups are provided lunches. We evaluated MVI’s kitchen practices through food waste measurement and conducted brand specific research regarding production practices, including carbon emissions, energy use, and conservation. Our report provides a food purchasing protocol for MVI to better understand the quantity of waste, pricing, sourcing, and sustainability of the food they purchase, as well as an educational poster to summarize our findings.
